15-minute No-bake Chewy Cookies

Who knew you could make such sweet treats in just a short amount of time, and without needing an oven? For just 15 minutes, you can make a dozen of chewy cookies and put them in a cute jar or box to be enjoyed by your loved one when they’re craving a snack.

What You Need:

  • 2 cups white sugar
  • ¼ cup unsweetened cocoa powder
  • ½ cup milk
  • ½ cup margarine
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • ½ cup chunky peanut butter
  • 3 cups quick cooking oats

What to Do:

  1. Warm up the saucepan over medium heat, then mix sugar, cocoa, milk and margarine in the saucepan. Bring to a boil while stirring, then boil for one minute. Remove from the heat, then mix in vanilla, salt, peanut butter and oats.
  2. Scoop spoonfuls and place them on waxed paper. Cool the cookies for an hour, then store in an airtight container.

No-bake Raspberry Chocolate Cupcakes

This recipe makes 8 mini cupcakes in just two hours, so it’s perfect if want to give Valentine’s Day sweet treats to a lot of people – your best friend, your family, your special other – in just a short amount of time! You can even put these cupcakes in individualized cups and liners to really make their day.

What You Need:

  • 100g bar white chocolate
  • 300g (10oz) Madeira cake
  • 1 medium egg white
  • 60g (2oz) caster sugar
  • 200g tub cream cheese (we used Philadelphia)
  • 100g (31/2oz) raspberries
  • 5.5cm (21/4in) cutter
  • 8 muffin cases in muffin tins

What to Do:

  1. Put water in a pan and simmer. Place the chocolate in a bowl, and place the bowl over the pan until the chocolate melts. Stir then set aside to cool.
  2. Cut the Madeira cake into 8 slices then crumble each slice. Pack the cake crumbs into the cutter. Press it down to form a disc. Put in a muffin case and press into the base. Repeat with all cake slices.
  3. Whisk the egg white into a foam, then mix in the sugar by whisking. Add cream cheese to the melted chocolate and mix. Fold the meringue mixture and all (except 8) raspberries. Spoon the mixture on to the cake in the muffin cases. Place a raspberry on top of each one.
  4. Chill all the cupcakes until firm (2 hours).

Our favorite cooking legend created an easy, no-bake recipe for one of our favorite desserts: the cheesecake. Pair this up with a romantic night in, a nice dinner and some wine, and you’ll be sure that sparks will fly with you and your significant other this Valentine’s Day. It takes 3 hours and 30 to make, but at the end you’ll pat yourself on the back for making this delectable, 9-inch treat.

What You Need:

  • 20 sheets graham crackers
  • 11 tablespoons (1 3/8) unsalted butter, melted
  • 2 tablespoons sugar
  • 2 8-ounce packages cream cheese, room temperature
  • 1 14-ounce can (1 ¼ cups) sweetened condensed milk
  • ¼ cup fresh lemon juice
  • 1 teaspoon vanilla extract

What to Do:

  1. Put the graham crackers in a resealable plastic bag, then crush with a rolling pin until fine crumbs are formed.
  2. Pour the crumbs into a medium bowl then stir in sugar. Add butter and stir.
  3. Press the crumb mixture into a 9-inch springform pan, spreading it.5 to 2 inches up the side. Press flat then chill in freezer for at least 10 minutes.
  4. To make the filling, use an electric mixer at medium speed to beat the cream cheese in a large bowl until it is smooth. Beat in the condensed milk a little at a time, then beat in the lemon juice with vanilla.
  5. Pour the filling into the chilled crust and smooth the top using a rubber spatula. Cover with plastic wrap then refrigerate for 2.5 to 3 hours or until firm.
  6. Remove the cheesecake from the pan by unclasping the sides.

Sunny’s Magical No-Bake S’mores

This recipe makes for 12 servings, so it’s perfect for sharing with your special other. Curl up to your favorite movie under a blanket and eat these sweet treats – or maybe even have them delivered to your significant other’s office as a surprise, mid-day snack.

What You Need:

  • 1 ½ cups ice-cold milk
  • A 3.9-ounce box of instant chocolate pudding
  • 1 ½ cups marshmallow cream
  • 1 cup whipped topping
  • 3 sleeves cinnamon graham crackers
  • ¼ cup shaved or shredded chocolate

What to Do:

  1. In a bowl, whisk together milk and the pudding mix and allow to firm up.
  2. Blend the marshmallow and whipped topping in a mixer until smooth.
  3. Line the bottom of an 8-by-8-inch dish with the graham crackers, then spread half of the chocolate pudding mix evenly. Add another layer of graham crackers then spread with marshmallow mix evenly. Repeat the process until the marshmallow layer ends up on top. Sprinkle with shaved chocolate, then refrigerate for four hours.
