The rainy weather hasn’t been very kind to the Philippines recently, but don’t let the rain rob you of your joy! If your soul is as gloomy as the dark clouds looming outside your window, put on some nice music, slip into comfy clothes and make yourself a hot cup of tea in the kitchen. 1. Homemade Mushroom Soup
There is nothing a steaming bowl of creamy mushroom soup can’t fix. Have this with hot buttered rolls or garlic bread, or simply enjoy it on its own.
What You’ll Need
- 2 tablespoons butter
- 1 tablespoon olive oil
- 500g mushroom flats, thinly sliced
- 40g plain flour
- 500ml water
- 500ml vegetable stock
- ⅓ cup fresh parsley, chopped
- Salt & black pepper
Heat the olive oil and butter over medium heat until bubbles start to appear. Add the mushrooms and stir for 10 minutes until the mushrooms have softened, then add the flour and stir for 1 minute. Increase the heat as you slowly add the vegetable stock and water while stirring consistently. Reduce the heat to medium-low and cap the lid over the pan for 10 minutes to let the broth simmer. After that, feel free to sprinkle parsley, salt and pepper into your soup. Now you have Food Network-worthy mushroom soup in your kitchen.
2. Sweet Potato & Toasted Pecan Grilled Cheese Sandwich
If you love sandwiches, you’ll absolutely love this one. The fusion of cheese, crispy pecans and creamy sweet potato will kick the rainy blues right out of your system.
What You’ll Need
- 8 slices country white bread
- 2 cups toasted pecans, crushed
- Mashed sweet potatoes
- 8 slices aged Swiss cheese
- Fried onions (optional)
- Chili powder (if you want something spicy)
- 4 tablespoons butter, softened
First, heat the skillet over medium heat. Then layer on Swiss cheese on the bottom slice of bread, mashed potatoes, crispy onion, a tablespoon of crushed pecans, 3 pinches of chili powder and add on another slice of cheese. Cap the slice of bread on top and smear softened butter on both sides of bread, then griddle each side until the surface of the bread turns golden and the cheese puddles out in a delicious mess. And there you have it — the perfect sandwich!
3. Shrimp Scampi Spaghetti
You can never go wrong with a tasty plate of pasta. Pair it with a glass of chilled wine and a good movie and you’re good for the night!
What You’ll Need
- 8 ounces spaghetti
- 2 tablespoons olive oil
- 1 shallot, chopped
- 6 cloves garlic, smashed and minced
- 1/2 teaspoon red pepper flakes
- 1/2 cup dry white wine (Sauvignon Blanc or Pinot Grigio)
- 6 tablespoons salted butter
- 1 pound large shrimp (16-20 count), peeled and deveined
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh tarragon, chopped
- 1/2 lemon, juiced
Salt and pepper
Boil a pot of salted water over high heat. When it bubbles, add the spaghetti and cook until al dente. Drain noodles and set aside after 25 minutes. Warm the olive oil in a skillet over medium heat, then add the shallots, garlic, red pepper flakes and some salt and pepper for good measure. Saute the ingredients until a yummy aroma arises, then add the wine and butter. Stir in the shrimps and cook on each side for 3 to 4 minutes until the meat turns pink, which means it’s safe to toss in the cooked spaghetti, tarragon, parsley and lemon juice.
4. Arroz Caldo
The arroz caldo is a lifesaver. It got us through sick days and bad days and true to its nature, it never failed us on rainy days.
What You’ll Need
- 1 (3 pounds) whole chicken, cut into serving pieces
- 1 tablespoon oil
- 1 small onion, peeled and sliced thinly
- 3 cloves garlic, peeled and minced
- 4 tablespoons fresh ginger, peeled and minced
- 1 tablespoon fish sauce
- 1 cup uncooked rice
- 6 to 7 cups water
- 3 bouillon cubes
- Salt and pepper
For the Toppings
- 4 hardboiled eggs, peeled and halved
- fried garlic bits
- ¼ cup green onions, chopped
- calamansi or lemon, cut into wedges
- fish sauce
For the Fried Garlic Bits
- ½ cup oil
- 1 head garlic, peeled and minced
First, rid the chicken of unwanted fat, then rinse and drain it well. Next, you saute the onions, ginger and garlic, and then you toss in the chicken and stir constantly until the meat turns a light shade of brown. That’s when you include the fish sauce, and after 2 minutes, stir the rice into the mixture until it starts to brown. Add bouillon cubes and stir until they dissolve, then lower the heat before capping the lid over the pot to let the mixture simmer. Stir occasionally until the congee has thickened to your desired consistency, then season it with salt and pepper. Feel free to top it off with hard boiled eggs, green onions, toasted garlic and calamansi or lemon.
